A traditional Romanian bean soup made with dried beans, chopped vegetables, and flavored with spices and fresh dill. This hearty dish is perfect for any meal and typically served with fresh bread.
Soak the beans overnight, then rinse thoroughly.
Boil the beans separately, discard the water, and set aside.
Heat the oil in a large pot and cook the onions until softened.
Add the carrots, celeriac, red pepper, paprika, thyme, and bay leaves. Stir well to combine.
Add the drained beans, blended tomatoes, and enough water or vegetable broth to cover. You can use a bouillon cube for extra flavor.
Simmer for 45 minutes to 1 hour, or until the beans and vegetables are tender.
Finish with fresh dill and season with salt and pepper to taste.
Ladle the soup into bowls and serve with fresh bread and finely sliced onions on the side.
