Fasole Batuta is a traditional Romanian dish made with blended white beans, parsnip, carrots, onions, and seasoned with garlic and paprika. The dish is served with slow-cooked onions and can be enjoyed with fresh bread and pickles.
Soak the beans for 6 hours, then rinse thoroughly.
Boil the beans with the parsnip, carrot, onion, and thyme for 1-2 hours, or until tender.
Once cooked, discard the parsnip, carrot, and thyme, then drain the beans, reserving some of the cooking liquid.
Blend the beans with the garlic and a little of the cooking liquid until smooth. Season generously with salt.
For the slow-cooked onions, heat the oil in a pan and cook the sliced onions on low heat for 35-45 minutes until soft.
Stir in the paprika and a pinch of salt, then cook for an additional 5 minutes.
To serve, spread the white bean purée onto a plate and top with the slow-cooked onions. Serve with fresh bread and pickles.
