A delightful dish featuring king oyster mushrooms seared to perfection with garlic, chilli, and a spicy tomato sauce. Infused with red wine and herbs, this recipe is served with a side of bread, making it a hearty meal.
Get a pan nice and hot, then add a splash of olive oil.
Sear the mushroom slices on both sides until golden, seasoning with salt and pepper.
Throw in rosemary and sage for the last 45 seconds to crisp them up.
 Transfer everything to a plate.
Add more olive oil to the pan, followed by garlic and chilli. Sizzle for a few seconds.
 Toss in the chopped olives.
Add tomato paste and cook for a minute or two until it darkens slightly.
Pour in red wine (if using) and let it reduce for about a minute.
Tip in grated tomatoes along with half a cup of water. Simmer gently until the sauce thickens.
Season with salt and pepper, then stir in the butter until it melts.
Slide the mushrooms back into the pan and toss gently with most of the parsley.
Spoon the mushrooms and sauce onto a plate, top with extra parsley, and serve with good bread.
