Chhole Tikki Chaat is a popular street food in India and Pakistan, cherished for its unique flavors and easy preparation. A blend of chickpeas and spiced potatoes, it's often served with vibrant green chutney and a variety of garnishes. This version maintains the essence of traditional recipes while allowing for personal adaptations.
Blend together the coriander, mint, garlic, ginger, green chillis, salt, and yogurt with water as needed to make the green chutney.
In a pot, combine the cooked chickpeas, bay leaf, dried red chillis, coriander seeds, fennel seeds, cumin seeds, ginger/garlic/green chilli paste, blended tomatoes (if using), ground turmeric, chilli powder, hing, coriander powder, and salt. Cook to allow flavors to meld.
For the tikki, mash the boiled potatoes, season with salt, shape into patties, brush with oil, and bake at 200°C for 15-20 minutes.
Assemble the chaat: On a plate, place the tikki and top with the chickpea mixture, yogurt, tamarind sauce, sev, chopped onion/tomato, green chillis, and chaat masala.
 Serve immediately and enjoy!
