A delicious focaccia made with strong white bread flour, topped with garlic, jalapeños, olives, cherry tomatoes, and dried oregano. The dough is mixed, kneaded, rested, and baked for a golden crust.
Mix the yeast and water then add the flour and salt.
Bring the dough together then knead for 10 minutes, adding flour if needed.
Form into a big ball and put dough in an oiled bowl covered with cling film overnight.
Take out the dough and roll into a large square (to fit your baking tray).
Oil the baking tray generously (about 50g oil).
Put the dough in the cast iron pan and leave to rise outside the fridge for 1-2 hours.
Add your toppings with the oil/water mix.
Bake at 200 degrees Celsius for 30-35 minutes or until golden and cooked through.
