A non-traditional version of the Vietnamese recipe Cha Gio, made with fresh vegetables and vegan mince, cooked in an air fryer. No need to fry the filling beforehand, this dish is perfect for a healthy snack or appetizer.
Mix sugar and hot water first to dissolve the sugar, then leave to cool.
Add fresh lime juice, light soy sauce, chopped red chilli, and chopped garlic to the cooled mixture and stir well.
Prepare the filling by finely chopping the carrot, shallot, garlic, spring onion, and oyster mushrooms.
In a bowl, combine the chopped vegetables with meat-free mince and light soy sauce.
Assemble rice paper rolls by placing the filling on the rice paper and rolling it tightly.
Cook the rolls in an air fryer until crispy and golden.
