Malted Rice Pudding Brûlée

1: Heat the butter then toast the rice for a couple of minutes.

2: Add the vegan cream and about a cup of milk. Cool until the rice starts to absorb some liquid.

3: Mix a little hot milk with 2 tbsp of Horlicks and then add that to the rice to prevent lumps.

4: Keep stirring and adding milk to the rice as needed until it is cooked.

5: Let the rice cool then add more cold milk to make it more loose. Stir through the chocolate chips and transfer the mixture to ramekins.

6: Make sure they are fully cool then sprinkle sugar and blowtorch or grill until caramelized. Enjoy!!
