A delicious vegan version of Keftedes, the Greek Cypriot meatball, made with grated potatoes and a combination of spices and herbs. This recipe was inspired by a cooking experience in Portugal with a friend's family from Cyprus.
Grate the potatoes and finely chop the onion.
Tear the bread roll into small pieces to make breadcrumbs.
In a bowl, combine grated potatoes, chopped onion, vegan mince, parsley, dried mint, cinnamon, salt, and black pepper.
 Form the mixture into meatballs.
Roll the meatballs in plain flour.
Heat vegetable oil in a frying pan over medium heat.
Fry the meatballs until golden brown on all sides.
 Serve hot and enjoy!
